Salami is the true excellence of Italian tradition and the protagonist of all the tastiest aperitivo boards.
Just cut it into slices and enjoy a whirlwind of pleasure.
But have you ever thought of using it in the kitchen?
Today we take you into the kitchen to prepare 3 delicious baked Salami recipes.
We have chosen the Nero del Rosa cured salami for its more intense but balanced flavour.
It’s a traditional salami from the Ossola Valley in Piedmont.
Puff pastry rolls with salami, courgettes and cheese
INGREDIENTS
– 1 roll of puff pastry
– 100 g salami,
– 100 g sliced cheese,
– Milk to taste
PROCEDURE
Roll out the puff pastry on a flat surface and cover with thinly sliced salami.
Add the cheese slices on top of the salami.
Roll up the puff pastry and place it on a baking tray with baking paper.
Cut the roll of puff pastry into small pieces of 5 cm each and place the turnovers upright.
Brush the surface with milk.
Preheat the oven to 200° in fan mode and bake the turnovers for 20 minutes.
Let cool before serving and add pepper on top for an extra touch of flavour.
Potato flan with salami and red cow cheese
INGREDIENTS
– 800 g potatoes (you can replace them with artichokes or Jerusalem artichokes)
– 3 eggs,
– 100 g cream,
– 80g Vacche Rosse cheese
– 80g salami,
– fresh thyme,
– 2 tablespoons breadcrumbs,
– oil, salt and pepper.
PROCEDURE
Peel the potatoes and cut them into thin slices.
Lightly steam the potato slices.
In a bowl, beat the eggs together with a whisk. Add the grated red cow’s cheese, cream, salt and pepper to taste to the eggs.
Dice the salami.
Take a baking tin and butter the bottom and sides. Cover the buttered side with breadcrumbs and start adding a layer of potatoes. Pour in some of the egg and cheese mixture and a few cubes of salami.
Repeat this in layers until the dish is full. Add fresh thyme on top.
Bake for 30° degrees and 180° degrees in fan mode.
Vegetable pancakes with salami
INGREDIENTS
– Potatoes (you can replace them with courgettes, carrots or other vegetables or make a mix of vegetables and various potatoes)
– Salami,
– Red cow’s cheese
– 2 eggs,
– 3 tablespoons 00 flour,
– Salt and pepper to taste.
PROCEDURE
Peel the potatoes. Coarsely grate them with the help of a coarse-hole grater.
Beat the 2 eggs in a bowl with a fork and then add the grated cheese and flour.
Add salt and pepper to taste or your favourite herbs.
Mix everything together with the potatoes and the salami cut into cubes.
Take a baking tray and cover it with baking paper.
Put a spoonful of potatoes and mash the mixture as if to form a pancake.
Drizzle with extra virgin olive oil and bake for 10 minutes at 180 degrees in ventilated mode.
Leave the pancakes for another 5 minutes in the oven in grill mode to brown and crisp up the surface.
