Like Silvio Scapin, an artisan who continues to produce by hand this pork sausage, typical of Bologna’s culinary tradition.
He makes no compromises, because in order to create artisanal mortadella he chooses ancient local techniques, hardworking hands that respect tradition and enhance the raw materials.
For 30 years Silvio has been developing his own recipe, made of passion and secrets of the trade.
