A bit of history
Pastificio Caponi produced handmade pasta in the heart of Tuscany and has been doing so since 1953.
They began as a small workshop making fresh pasta. In the 1960s they grew and began producing fresh and dried egg pasta.
Since the 1980s they have dedicated themselves entirely to dried pasta, and only hand-made egg versions, rather than drawn pasta. Following the same tradition of a family making home pasta. It is for this attention to care that they cannot produce industrial batches, but rather small ones to share with true food lovers looking to enjoy the Italian tradition.
