Dried and salted beef, Bresaola is a delicious and healthy alternative to the classic Italian salami. Usually served thinly sliced it is excellent to pair with cheeses or light dishes. It is recognized by its elegant dark purple colour. Bresaola can be quite dry, as that of Casa Walser with mountain herbs, or it can be a bit softer and chewy like the Moccino di Prato Fiorito or Mocetta. Always a rich flavour from its seasoning with local herbs.
