Lard is the deliciously cured fat that flavours Italian dishes, and adds a smooth delight to meat and cheese boards. It can be lightly seasoned with local herb and pepper like the Striped lard of Garfagnino or it can be a little more flavoured like that with myrtle. Some producers leave a little edge of cured meat with the lard to balance taste and harmonise this delicious cured meat.
