For more than five centuries, rice has been the queen crop of Piedmont, defining its eastern landscape (the typical "risaie") and characterising its agricultural economy. Many varieties of rice are grown here, from the most famous Arborio with its large grains, excellent for creamy risottos, Roma with its fine grains, Carnaroli, whose grains are the most prized because it has an excellent capacity to absorb flavours. But it is not only Piedmont, in fact, but rice also is a beloved product throughout Italy, and producers have been working to produce many different varieties far and wide.
