A rich sweet wine - passito has always been part of the culture and tradition of Italy. The name comes from appassimento in Italian. Appassimento is the process of letting the grapes dry and concentrate their natural sugars before vinifying them. Grapes are harvested at a normal time, then left to dehydrate in large open rooms, sometimes even for months. As it is quite a long process, these sweet meditation wines are often produced in smaller quantities. Some of the most well known passito expressions are Vin Santo of Tuscany, or the Aleatico of Elba, but every region has their own unique version.  Passito releases its full potential when paired with desserts and fruit or cheeses.
