Made with Florence Violet Artichokes

Sweet taste and floral aroma

Excellent as a side dish for meat dishes

Scovaventi's artichokes in oil contain all the fragrance and essence of spring. They are prepared by cultivating the Violetto di Firenze variety: artichokes with a medium-small head that are harvested in spring, in the cool hours of the morning and during the days when the flowers bloom.

Luca and Carolina clean the artichokes by hand until the heart is obtained, which has the most flavourful and delicious taste. The artichoke hearts are grilled and then flavoured with white wine, garlic, onion, vinegar and rosemary, cloves and salt. Finally, they are placed in the jar and covered with extra virgin olive oil produced on the Podere di Scovaventi.

The Violetto artichoke is characterised by its violet-coloured veins and a sweeter taste than the more common varieties.

They are excellent served with an aperitif or as a side dish for meat dishes.
