Fermented black garlic cloves are a variant of classic white garlic that is obtained after a long process of natural maturation at controlled temperature and humidity. As a result, the cloves are blackened, the texture is softer and the flavour takes on a balsamic aftertaste with hints of liquorice. But the real magic is the loss of allicin, which commonly makes classic white garlic indigestible.

Alice and Guglielmo from Umami are two young biologists who are experts in food processing and have taken the capacity for natural fermentation to extremes. In addition, black garlic cloves can be considered a superfood that promotes wellbeing thanks to its antioxidant and antibacterial properties. All that's left is to break down your prejudices about garlic!

Each clove of garlic is wrapped in its natural skin to preserve its nutritional properties. Peelable black garlic cloves can be combined raw with any dish or used in risottos and pasta sauces.
Excellent for enhancing the delicacy of fish, adding flavour to meat and making vegan and vegetarian dishes unforgettable.

Wine and all bottles in general are shipped in inflatable bags, designed to protect them throughout their journey. Please note that all packaging can be easily reused.
