Dunkles Weissbier “Gran Briis”

The Dunkles Weissbier "Gran Briis" is the first Weiss brewed with burnt wheat, "grano arso". It is a high fermentation beer unfiltered and unpasteurized, hazelnut in color, cloudy, with uniform and intense foam, persistent aroma for a unique and unmistakable taste: that of "grano arso".

In a cuisine with proudly peasant roots like the Italian one, it seems difficult to find a poorer ingredient than Grano Arso.

It has ancient origins, after the harvest of durum wheat, in fact, the stubble was burned and a few scorched grains remained on the ground. The owners granted the farmers the "privilege" to harvest them. The grains gathered in this way were ground in mills and then mixed to the normal - and very precious - flour.
In recent years, these burnt grains have recently been rediscovered by some restaurateurs.

However, today's "grano arso" is produced in a very different way: it is not burnt durum wheat, nowadays considered dangerous for health, but simply toasted, from which flour is obtained which, mixed with white flour, gives life to simply unique products, thanks to that slight smoked and toasted aftertaste.
The flour (or rather, the semolina) of "grano arso" also has many properties: it is whole wheat, and has a lower gluten content, to the point that the ancient wisdom of the farmers has inspired a technique that, developed in 2014 by the University of Foggia, could make durum wheat "inoffensive" even to celiacs.
