Description

"Pieve Tho" oil is an extra virgin olive oil, its harvesting is done manually or with the help of small hand tools: the olives fall on the nets; the territory does not allow any kind of mechanization.

The extraction, cold, uses a modern technology resulting from the action of a rotary extractor with controlled speed and electronically variable, which acts in relation to the viscosity of the olive paste. The whole process is carried out at low temperature. of the Nostrana cultivar and typical cultivars of the Brisighellese area.

Also called "The Balanced", this oil has an intense fruity green aroma, with scents of fresh grass and vegetables.
To the palate it is full, clean with a slight sweet note.

Excellent for seasoning: legume soups, pasta al mattarello, steamed and grilled meats.
Likes strong flavored vegetables such as arugula, chicory, radishes, savoy cabbage and kale.
