Taste of the Adriatic

S'arde in compagnia" are sardines fished and processed manually in Comacchio according to the historical Comacchio tradition of marinating fish.

Sardines are fished exclusively in the northern Adriatic Sea, in the Po Delta area, FAO zone 37.2.1, and follow a transformation process similar to that of the marinated anchovies.
As soon as they are caught, they are transported to the Manifattura dei Marinati where they are processed by hand, then left to fry in flour and sunflower oil. After a full day, they are placed by hand in tins and immersed in a brine of white wine vinegar, water, Cervia's whole sea salt and bay leaves.
