Description

Paltufa: a unique delicacy born from the encounter between the classic gorgonzola and the precious black truffle.
There are those who love it, those who lie, and those who just take a small taste to remove any initial confusion about the combination of Gorgonzola and truffle.

The creaminess and sweetness of the blue cheese are enhanced by the intense flavour of the black truffle.
It is produced from the highest quality whole cow's milk, pasteurised and matured for at least 70 days.
To the eye, it is white tending to straw yellow in colour with characteristic blue and greenish or grey-blue veins. The taste is buttery and melting and retains all the flavour of the truffle.
The slightly spicy flavour of the sweet gorgonzola is perfectly balanced by the rich taste of the black truffle.

Pair with a glass of Gattinara DOCG red wine, structured, robust and full-bodied, and serve Paltufa for your aperitivo.
It is excellent for garnishing pizza, polenta, risotto or slices of grilled meat.

Gorgonzola is one of the world's best-loved cheeses and there are some funny legends about its origin.
We like to believe the one about the cheesemaker in love who, immersed in thinking about his beloved, accidentally mixed two different curds that gave this speciality its name.

All varieties of Gorgonzola, including Paltufa, are naturally lactose-free. The milk enzymes added during the first part of the cheese-making process create a fermentation process that consumes the lactose and eliminates it completely.
Paltufa is also suitable for all those with lactose and gluten intolerances.

Fun fact: Gorgonzola is defined as "mood food", as it calms anxieties and lifts the mood... All the more reason to eat it!

Our priority is to pack and ship the products safely. All the different types of cheese are vacuum sealed and we use dry ice and cool bags to keep the products fresh and their quality intact.

Wine and all bottles in general are shipped in inflatable bags, designed to protect them throughout their journey. Please note that all packaging can be easily reused.
