The rustic Capocollo of Antica Norcineria is produced using fresh Italian meat, processed and flavored with garlic, pepper, spices and wine. It has a strong and persistent taste, to be matched with full-bodied red or white wines. We also suggest to taste it with seasoned or semi-matured cheeses.
It is a cured meat which recalls the ancient tradition of the peasant families of Mediavalle and upper Garfagnana. In fact, in the peasant houses they always tried to preserve as best as possible every kind of food. In fact, the cellars were always full of hanging cold cuts and in the corners there were marble pits covered with salt and aromas to preserve meat. The ancient tradition still survives today, and it is in this way that the seasoned meats of the Antica Norcineria are still produced, which are genuine and rich in flavor.

We prepare the order in 24 to 48h and shipping in EU usually takes 2 to 3 days.
It is our priority to pack and ship the products securely. All the different types of cheese are vacuum-sealed and we use dry ice and thermal bags that keep the products fresh and their quality intact.
Wine (or bottles in general) are shipped using inflatable bags and are designed to protect them throughout the journey. We remind you that all packaging can be easily reused.
