The rabbit tuna is one of the main appetizers of the Piedmontese tradition. Born to deceive the during the period of Lent, when you were not supposed to eat meat. This appetizer disguises delicious rabbit fillets as tuna, being preserved thanks to oil and garlic. It is also highly appreciated during the summer periods thanks to the delicacy of the white meat.
