Ragù of Mora Romagnola

This ragout is the result of a careful selection of the finest cuts of Mora Romagnola, which are then knife-cut and seasoned with a light fry and spices that enhance the intense and tasty flavour of the meat. The Mora Romagnola is a historic breed of pig protected by the Slow Food Presidium. In fact, only five Italian breeds are protected by the Presidium for their historical value. The Azienda Zavoli is part of the valiant project that has seen the recovery of this breed to save it from extinction. Its meat has a more intense and tasty flavour than traditional pigs and has a savoury and compact but pleasantly soft texture.

It is excellent to use as a ready-to-use sauce for pasta, to be heated slightly in a pan with a drizzle of olive oil, or to prepare delicious homemade lasagne.
