The Salame Zia is composed of a mixture of pork with salt, pepper and lots of fresh garlic left to macerate in white wine. Its taste is inextricably linked to the history of garlic, which strongly characterizes the cultivation of the Ferrara area.

Ferrara aunt can be tasted during the whole year, as an appetizer or as a second traditional dish, accompanied by a good glass of red wine.

If you say "zia" in Ferrara, you mean taste and tradition! In dialect it is called "Zié" and its history begins in the late Renaissance period, in the cookbooks of Cristoforo da Messisburgo at the court of Este. It is typical of the Ferrara countryside.
