The grapes are selected by hand in boxes followed by a short maceration in the press. Fermentation takes place in temperature-controlled steel tanks. After 2 years in the well, the bottles are rested in pupitres. After disgorging, a year of bottle ageing follows without filtration. The bottle is contained in an elegant cardboard box that makes it perfect as a gift and wrapped in a parchment that tells its story. It is produced in very few bottles per year. "Mario" is the name of the grandfather who determined the company's past and also the name of Claudio's son who will determine its fortunes in the future. "Pozzo" is the place where the bottles are aged: an old family well whose temperature and depth allows the indigenous yeasts in the wine to counteract the pressure.
To the eye, it is straw yellow in colour with golden reflections. It has a very fine perlage. The nose reveals a strong and determined character: notes of wisteria, acacia flowers, peach and apricot. The aromaticity of its sip is never cloying.
It is the perfect wine to accompany dessert and end the meal with the right serenity. Ideal with dry pastries. But its floral and spicy aromas make it sublime to accompany blue cheeses as well.
