Vin Santo San Gimignano di Pietrafitta is wisely produced by selecting the best grapes of Malvasia (10%) and Trebbiano (90%). The processing method carefully follows the tradition: the grapes are dried for four months in sunny places, then pressed and left to ferment in wooden barrels, traditionally called "caratelli". Maturation lasts at least six years and casks are placed in the attic in order to ensure the best atmospheric and environmental conditions which guarantee the excellence of the product. Once the maturation is over, it is bottled and sold to the public after only six more months of aging in bottle.
Vin Santo San Gimignano di Pietrafitta shows an intense yellow color with golden hues. The nose releases a delicate and persistent bouquet, it can be perceived hints of honey, chocolate and dried fruit.
Of course it is impossible to taste Vin Santo without accompanying it with Fratelli Lunardi's excellent cantucci.
